Lately I have all kinds of cooking moods… one day I want to prepare the most sophisticated meal ever, and the next day I want to cook something really, really simple and delicious. Maybe, the weather is to blame… one day is hot and sunny and the next day it is raining, cold and grey… Isn’t is summer already? But.. where?!
So, this is one of the times, when I was begging for a simple inspiration, simple recipe, simple preparation… no cookware to wash, no kitchen to clean, something which I could eat, while watching my favorite movies, on the couch, lazy as I sometimes am.
The avocado hummus – healthy, easy, quick, delicious and simple. One of the best things about this recipe is that it is absolutely adjustable to your taste… you can add more avocado, sun-dried tomatoes, fresh tomatoes, nuts or any other favorite ingredient.
Ingredients:
1 can chickpeas, drained and rinsed
1 large ripe avocado, cut into small pieces
2 tablespoons fresh parsley
3 garlic cloves
1/2 onion chopped into small pieces (or green onions)
Juice of half lime
2 tablespoons sesame oil
1/2 teaspoon coriander
Salt and Pepper
Chop all ingredients.
Place them in the bowl of your food processor and season with salt, pepper and coriander.
Blend until pureed.
Serve with bread or crackers.
