Cod fish with spicy-lime mayo and brazil nuts

One of my latest findings is Chris Schlesinger and John Willoughby’s book. I have to admit that I have many large cook books at home but this one is really nice. All of the recipes are organized in an easy to follow way, there are huge variety of recipes and many brilliant sauces and sides.
I couldn’t help but try one of the recipes, which calls for white fish, garnished with spicy-lime mayo and caramelized spicy pecans.
Believe me .. this is a great combination!

Ingredients for the fish:
500 grams cod fish fillet
2 table spoons olive oil
1/2 tea spoon chili flakes
Salt & Pepper

For the pecans & Brazil nuts:
200 grams mix of Brazil nuts and pecans
3 table spoons brown sugar
2 table spoons olive oil
1 tea spoon cumin
Salt & Pepper

For the pecans:
Heat up the olive oil in a small saucepan.
Add the pecans and began to saute. Add the rest of the ingredients and cook for 2-3 minutes.
Let them cool completely before serving.

For the fish:
Heat up the olive oil in a large skillet.
Place the cod fish fillets, sprinkle with salt, pepper and chili. Cook about 3-4 minutes, or until the fish turns nice and golden.
Carefully flip over, sprinkle with salt and pepper and cook about 2-3 minutes on the other side.

Serve with the roasted nuts and this spicy-lime mayo.
