Quinoa with mint and vegetables

During the past few years I discovered, that sometimes healthy meals, could be delicious, as well. Sometimes, there is no need of greasy meat, bread, french fries and rice. In case you want to take a little break on the fat food or rice, all you need to do is run to the closest organic store and buy some quinoa. Interestingly, quinoa does not have any remarkable taste on its own. That is why I love it – it perfectly combines with many vegetables, meat, fish and sauces. It is easy and quick to cook, full of proteins, gluten and cholesterol free.
There are many recipes for quinoa, but my recipe for today is vegetarian.
Quinoa (1 of 1)-2
Ingredients:
100 grams (3.5 oz) quinoa (dry)
1 carrot (grated)
1 small onion (cut into small pieces)
4 garlic cloves (minced)
100 grams (3.5 oz) sweet corn
2 table spoons olive oil
A couple of mint leaves
2 table spoons lemon juice
Salt and pepper

Cook the quinoa according to the package instructions.
Heat the olive oil in a large saucepan. Add the onion and garlic and cook for a minute. Add the carrot, corn and season with salt and pepper. Cook until the vegetables get slightly tender.
Combine the quinoa with the vegetables, season with mint leaves, lemon juice and more salt and pepper, if necessary.
Serve warm or cold as a salad.
