We all know quinoa is one of the super foods, it is ultra healthy and very good for you. That is why I would recommend you to include it in your menu every chance you get.
Quinoa completes perfectly this spinach salad.
Cooked quinoa (quantity depends on your taste)
For the sauce:
2 table spoons Greek yogurt
1 tea spoon mayonnaise
1 table spoon milk
1 table spoon olive oil
Salt & pepper
Additional: reduced balsamic vinegar
Place the spinach, quinoa, chives and pumpkin seeds in a large bowl.
Mix all ingredients for the sauce in a small bowl, then add to the spinach and mix gently.
Adjust the salt, pepper and olive oil to your taste.
