This is one of my favorite salads.It is healthy and nutritional and could be even a good light dinner, just add a plate of mixed cheese and enjoy it with a glass of white wine.
Ingredients:
Baby spinach
Feta cheese
Sun-dried tomatoes – cut into small pieces
Raw pecans
Olive oil
Reduced balsamic vinegar
Dry oregano
Dry basil
Salt & Pepper
Mix all ingredients in a large bowl, season with salt, pepper, olive oil, balsamico, oregano and basil.
Quantities are up to you – ad more or less nuts, spinach or feta cheese.
