This recipe is inspired by those beautiful pickles, you’ll see below in the photos.
I photographed some of Mama’s delicious jars a couple of months ago and since the opened jar of pickles was right here I decided to make our favorite yogurt salad. It’s pretty simple actually, but so delicious. Just make sure to get your hands on a good quality Greek yogurt – that’s the most popular name around English speaking countries (I don’t know why), but around here we call it drained yogurt, cause most of its water has been drained and what’s left is thick and creamy full fat yogurt.
Ingredients:
400 grams (14 oz) drained yogurt (or thick and creamy yogurt, or so called Greek yogurt)
2 teaspoons mayonnaise
200 grams (7 oz) pickles, finely chopped or shredded
1 garlic clove, minced
1 tablespoon olive oil
2 tablespoons walnuts, finely chopped
1 tea spoon fresh dill, chopped finely
Salt and pepper
Combine all ingredients in a medium size bowl, stir and season with salt and pepper.
Add more or less walnuts, olive oil, garlic – just adjust the quantities of ingredients according to your taste.
This is such an unusual sounding dish, sounds fab though! I can imagine it being great on a hot summer’s evenings as a refreshing meal
