White chocolate chip banana muffins

These banana muffins are amazing! Soft, moist,sweet and full of flavor!
I baked these for the celebration of my baby boy turning 5 months! They are great for any kind of celebration or kids birthday party – easy and quick to prepare and we could say they are a bit on the healthier side since there the batter includes a lot of bananas and only 100 grams of sugar.
Whipped coconut chocolate ganache-1-2

Ingredients:
250 grams (9 oz) flour
1 tea spoon baking powder
A pinch of salt
130ml. buttermilk
100 grams (3,5 oz) sugar
65 ml. plain flavored oil/melted butter
70 grams (2,5 oz) honey
2 medium eggs
4 ripe bananas, mashed
150 grams white chocolate chips
Decoration: whipped coconut chocolate ganache

In a large bowl mix all dry ingredients: flour, baking soda, sugar, salt and chocolate chips.
In another bowl mix all wet ingredients: buttermilk, oil, honey, eggs and bananas.
Add the flour mixture to the wet ingredients and fold gently with rubber spatula.
Preheat your oven to 180 C (350 F).
Line a 12 muffin pan with paper cups.
Distribute the mixture evenly between the muffin cups and bake for 20 minutes.

Leave to cool on a wire rack then decorate with the whipped chocolate ganache.
