This recipe for chocolate cookies is very easy and perfect for people who do not have much time on their hands. Batter is done in 10 minutes, followed by 5-6 minutes for chilling and cookies are ready for baking.
Ingredients (makes 18 cookies):
110 grams (4 oz) unsalted butter, at room temperature
120 grams (4 oz) sugar
1 small egg
1 teaspoon vanilla extract
150 grams (5 oz) flour
1/2 teaspoon baking soda
1/4 teaspoon salt
80 grams (3 oz) chocolate chips
Preheat your oven to 375 F (190 C) and place the rack in the center of your oven. Line a cookie sheet with parchment paper.
In the bowl of your electric mixer (or with a hand mixer), beat the butter until smooth and creamy. Add the sugar and beat until fluffy. Beat in egg and vanilla until incorporated.
In another large bowl, combine the flour, baking soda, and salt. Add the flour mixture to the egg/butter mixture and beat until incorporated, adding the chocolate chips.
Using your hands form small balls and place on your baking sheet. Make sure to leave enough room between each cookie, since they are going to expand from the baking. If you have an ice-cream scoop you may use it to create equal by size cookies. Place in the freezer for about 5-6 minutes and then transfer to the preheated oven and bake for about 10 minutes.
