As we all know it is the season of pumpkins….
Since I am not the biggest fan of pumpkins, I will focus on another great fruit, perfect for this season – apples.
Instead of the pumpkin recipe, today I will share a super easy recipe for apple pie and cheesecake in one.
Apples, cinnamon and nutmeg – they all scream out autumn! Nothing could replace the smell of cinnamon, combined with the amazing view outside of fallen golden-colored leaves. Throw some delicious cream cheese, and I am sure that this will become your favorite autumn recipe.
Ingredients:

For the crust:
130 grams (5 oz) all-purpose flour
1/4 teaspoon salt
50 grams (2 oz) powdered sugar
130 grams (5 oz) cold unsalted butter, cut into small pieces
For the filling:
227 grams (8 oz) cream cheese
50 grams (2 oz) granulated white sugar
1 egg
1/2 teaspoon pure vanilla extract
For the topping:
50 grams (2 oz) granulated brown sugar
1 teaspoon ground cinnamon
5 apples, peeled and cut into small cubes/slices
100 grams (4 oz) chopped walnuts (or other nuts of your choice)
Preheat oven to 180 C (360 F) and place the rack in the center of your oven. Spray a fireproof pan with a non stick spray.
I suggest to make the topping first, because all of the apples need to be left to drain before you use them. So, place the apples in a strainer that is placed over a large bowl, add the sugar and cinnamon. Mix well and let it sit for 30-60 minutes. The more they sit, the better.
To make the crust, place the flour, salt, and sugar in the bowl of your food processor and pulse to blend together. Add the butter and pulse until dough just begins to come together. Pat the dough onto the bottom and up the sides of the pan. Cover with plastic wrap and place in refrigerator while you make the filling.
To make the filling add the cream cheese in your food processor and pulse until smooth. Add the sugar, egg and vanilla extract and process until smooth.
Remove the crust from the fridge and pour in the filling.
Place the apples evenly over the cream cheese layer and sprinkle with walnuts.You can add chocolate chips or other nuts if you like.
Bake 45-50 minutes or until the crust is brown.
Remove from oven and place on wire rack to cool and serve at room temperature.
Tip: You can serve with ice-cream, whipped cream or chocolate
