Easter bread is the best! The one bread I can eat all year long, every day. Especially if it’s homemade.
Easter bread is famous all over the world, in Bulgaria we call it “kozunak”, there is the Italian Easter bread, the Greek… For me it is all the same – flour, milk, sugar, oil/butter and eggs. So, no matter how you call it, it’s all the same and I love it!
It’s the proportions of the ingredients that make a difference, I believe. I’ve heard many complicated and overwhelming techniques for preparation, but I think there is no need of over thinking an Easter bread recipe. Some people keep a steady room temperature when kneading the dough then, let it rise in the same room, without opening the door (what?!) … some “bang” it on the kneading board many times, for whatever reason they might have. I think there is no need for such drastic approaches. The “banging” is probably to let the gluten develop, but if you have a stand mixer, you can just let it do the job. As for the steady temperature – what? why?… The yeast will do it’s job, no matter the temperature of the room. Yes, dough might rise faster if you keep it in a warmer room, but no matter what, it will rise eventually. Well, don’t keep it in the fridge unless you plan to bake it on the next day, though.
***no offence to those putting an extra though and effort into the Easter bread
As for this recipe, it is absolutely delicious, but my huge recommendation would be to make it and eat it. Don’t bake it ahead cause it’s meant to be eaten right away, soft and slightly warm.
You can totally make the dough the night before and leave in the fridge covered in plastic wrap. It will slowly rise by the morning. Then take it out and leave it at room temperature for about two hours to warm up. Once at room temperature you may continue with dividing, shaping and prepping for second rise (see the rest of instructions below).
Another important thing here is to understand that such dough needs a looo-o-ot of kneading. So, in case you have a hand or stand mixer – just use it. Dough is pretty sticky, so kneading it by hand will be a challenge, and please do not add extra flour to make the hand kneading easier, cause this dough is supposed to be sticky and greasy. For kneading by hand just use a non-stick spoon/spatula or whatever you have on hands and just stir it and push it around the bowl until soft, smooth and glossy.
I made these breads with orange peel and dark chocolate, but you could do other flavors, if you prefer.
Continue reading for detailed instructions on the preparation!
Enjoy!

Ingredients:
500 grams (17,5 oz) all-purpose flour
1 package instant dry yeast
A pinch of salt
220 ml. (8 fl. oz) milk, at room temperature
2 medium eggs, lightly beaten, at room temperature
100 grams (3,5 oz) honey
100 grams (3,5 oz) canola oil or other flavorless oil of your choice
Zest from 1 orange
100 grams (3,5 oz) mini chocolate chips or shredded chocolate
200 grams (7 oz) candied orange peel, finely chopped or raisins, soaked in rum overnight

In the bowl of a stand mixer fitted with a bread hook, add the flour, salt and yeast. Beat for 15 seconds to distribute the yeast evenly within the flour. Add the milk, eggs, oil and honey and beat for about 5 minutes until all is well combined. Continue beating for another 20-25 minutes or until you have super smooth and shiny dough. Dough will be a bit sticky, but don’t get tempted to add extra flour. Within the last minute add the chocolate chips and orange peel/raisins and beat to combine, about a minute.
Remove the bowl from the mixer and scrape the dough to the center of the bowl using a rubber spatula. Dust lightly with flour and cover the bowl loosely with plastic wrap. Allow to rest in a warm place until doubled in size, about 1 hour.
After rising, gently take the dough out of the bowl, using your hands, greased with oil and place on a large kneading board or on your counter. Don’t knead the dough and be gentle with it, you don’t want to deflate it too much.
Divide the dough into equal parts, as many as you like, depending on how many breads you are making and their size. I would recommend you to make two breads, because dough rises additionally during baking, so if you use it for one whole Easter bread it will turn out pretty huge. This dough makes two perfect medium sized breads. In order to do that, you will need to divide dough into 4 equal pieces. Gently roll each piece into a long rope, twisting it as you go. Attach two ropes at the ends, then twist them to make some sort of braid. Connect both ends to make a wreath and gently transfer onto a baking sheet lined with parchment paper. Repeat steps for the other two pieces of dough, which will leave you with two medium size wreaths.
Set them aside to rise again for about 30-45 minutes, depending on the temperature of the room.
Preheat your oven to 170C.
After the second rise, brush wreaths with lightly beaten egg and sprinkle some sugar on top.
Bake for 30 minutes, lowering the temperature of the oven if you see the tops starting to burn.
Remove from the oven and allow to cool to room temperature before serving.

The best pizza dough ever! Not much to say here except that this recipe is one of those you need up your sleeve when there is nothing significant in the fridge to cook or the kids are screaming pizza all day long. I am sure they will love the cheese stuffed crust.
Below you will find detailed instructions for making, using and freezing the dough

Ingredients:
670 grams flour
7 grams instant dry yeast (or other type of yeast of your choice)
1 tea spoon salt
1 table spoon sugar
370 ml. water
70 ml. olive oil

Add all ingredients in a large bowl. Mix by hand until all ingredients are well combined. Start kneading the dough until when poked with your finger it slowly bounces back (add extra flour for the kneading and dough seems too moist). Then your dough is ready (6-7 minutes). Form it into a ball and put in a greased bowl. Cover loosely with plastic wrap.
Let dough rest and rise in the warmest room you have.
Once your dough is double in size and super soft (it will take about 1 to 2 hours) you can divide it into equal size balls, depending on how many pizzas you are making and how thin you want the crust. This dough will easily make 5 extra thin large pizzas or about 3 thicker large pizzas.
Roll each ball of dough on a floured kneading board or your counter, then transfer to a greased pizza tray.
You can make your pizza extra tasty by stuffing the edges of the crust with mozzarella cheese.
To do that, place mozzarella strips around the edges of the pizza, then roll the edges of the dough up and over each strip, then press down to seal. Let rolled pizza dough rest for about 10-15 minutes.
Then, brush rolled pizzas with olive oil, spread one layer of tomato sauce and then add whatever else you prefer on it and bake for about 20 minutes.
Use this recipe to make the best tomato sauce for your pizza!
QUICK NOTE: I’ve been in a hurry in the past and used this dough without waiting for it to rise, just knead, roll and bake and I have to say that it’s really delicious too, but not so fluffy and doesn’t rise as much in the oven as if left for a few hours in a warm place.
So, if you don’t have the time to wait for the dough to rise, you can totally try the “knead, roll and bake” option.
ANOTHER NOTE: Feel free to freeze any left over pizza dough. In order to use the freezer dough you need to:
Option 1: Remove it from the freezer the night before and put in the fridge to thaw. Remove from the fridge 30 minutes before using.
Option 2: Quickly defrost in regular or microwave oven.

Making homemade cashew milk is super easy and quick, budget friendly and healthy.
With only 120 grams of nuts you can make a liter of milk to enjoy throughout the week.
The best thing about cashews is that they are soft and could be processed in a standard blender finely, without leaving a lot of waste, in other words, you will not be throwing most of the nuts away when you strain them, just the opposite, there will be no waste but a table spoon at most.
Cashew milk could be used instead of regular milk for your coffee and in many recipes.

Ingredients:
120 grams raw cashews
700 ml. water
1 table spoon Honey/Agave (optional)
A drop of vanilla extract (optional)
A pinch of salt

Soak cashew nuts in water overnight.
On the next day, drain the cashews and rinse until the water runs clear.
Add to a blender with the rest of the ingredients and blend until smooth and creamy. Strain through a fine sieve and pour in a jar.

NOTE: Add more or less water, depending on your taste and how creamier you want your milk to be. With the proportions above you will get pretty creamy milk, which is great, but I think that it could take on additional 200 ml. and still be super tasty.
Store in the fridge and use within 5 days.

This post is dedicated to chestnuts.
Sweet, starchy and flavorful, chestnuts are great source of vitamins and minerals and perfect for all kinds of recipes, from soups and savory meals to sweets and cakes. You would be surprised how many recipes you can make with chestnuts.
Just like any other great thing in life, chestnuts are seasonal and this is the time for you to stock up or just cook and eat as much as possible before they are gone.
There are a few ways to cook chestnuts and I plan to give you the best instructions, which will make your life a little easier.
So, straight to the point – you can either bake chestnuts or boil them. In my opinion and experience roasted chestnuts are amazingly delicious, just sprinkle a little bit of olive oil, rosemary, salt and pepper and this could be your perfect movie snack. But, yes, there is a “but” - baked chestnuts are usually hard to peel, they cool off too quickly and then they are almost impossible to peel. So, if you, for instance, need to peel a pound of chestnuts for a recipe (may be a soup) then you will be in a lot of pain, and at least an hour or may be two into this peeling exercise. You don’t want that, plus who has 2 spare hours for peeling chestnuts, well, you probably know the answer to that one.
So, that leaves us to boiling the chestnuts. This for sure is the easiest way to cook chestnuts. Recipe is pretty straight forward – wash chestnuts, make a small cut (an “X” shape) into the flat side of each chestnut, just enough to cut the skin, not the nut and then put in a large sauce pan, bring to boil and cook for about 30 minutes. Remove sauce pan from stove but leave chestnuts in the hot water (chestnuts are easily peeled when warm/hot). Let chestnuts cool off a bit (about 20 minutes) then start peeling them one after another. Take them out of the water one by one. Voila!
Now, you can right away use the amount of chestnuts you need and put the rest of the chestnuts in the freezer for another recipe.
Once you have the cooked and peeled chestnuts things can get more interesting – recipes and options for consuming the chestnuts are endless.
So, now I want to tell you how to make your own homemade chestnut puree – this recipe is pretty much essential for many dessert recipes, mousses and puddings.

Ingredients:
200 grams boiled and cleaned chestnuts
300 ml. milk
1 vanilla bean

Add chestnuts and milk to a saucepan. Using a knife, scrape seeds from vanilla bean into the pan and add the pod, as well. Simmer for about 30 minutes or until chestnuts are very soft and about half of the milk has been absorbed. Remove from stove and strain, saving the milk in a small bowl. Discard the pod. Puree chestnuts with a hand-held blender or in a food processor, adding some of the milk if necessary. In my experience I always end up using all the milk. Just be careful, though, you don’t want to make your puree too thin.
Cover in plastic wrap and keep in the fridge for up to a week. In case you have a few extra ounces of chestnut puree, just put in a freezer proof box and freeze until you need it.

It is quite an easy job to make a homemade pesto. I am not saying I don’t like the store bought type, but it is kind of great to have a jar of something homemade, knowing every single ingredient you have added and every single drop of olive oil is good quality. No preservatives.

Homemade pesto could be made without a food processor, too. All you need to do is finely chop up the nuts and garlic, grate the parmigiano reggiano and then use a hand held blender to combine all ingredients. It may not be as fine as a pesto made in a food processor, but it will still be delicious.

Basil pesto is all about the taste, and taste can vary and change, depending on the quality of the products you use and the ratio. Don’t hesitate to add more garlic if you want a stronger garlic-y taste, add more lime juice if you want a fresher taste or add more cheese in case you prefer the thicker pesto. My favorite pesto is made in the ratio I am sharing in this recipe, but you go ahead and adjust it as you like it best.

You can store the pesto in your fridge for up to a week, use in salads, a quick homemade pasta with zucchini or just on a slice of bread with extra cheese and tomatoes.

Ingredients:
25 grams (0,9 oz) walnuts
25 grams (0,9 oz) pine nuts
40 grams (1,4 oz) finely grated Parmigiano Reggiano
4 small garlic cloves
Juice from 1/2 lime

100 ml. olive oil
Salt & Pepper
1 cup of fresh basil leaves

Add all ingredients in a food processor. Process until a fine paste. Adjust the taste and texture by adding more lime juice, garlic or additional cheese.

One of the best parts of summer is having lots and lots of fresh, sweet and amazing tomatoes, perfect for a homemade tomato sauce. I can never do this recipe in the winter, simply because tomatoes are not good, but during the summer it is all I can think of!

This recipe is insanely easy to prepare and once you taste this amazing tomato sauce you will want to have it in your fridge all year long. Sorry though, you can’t cause this recipe is strictly a “to-do-during-the-summer”, so enjoy it while you still have those sweet and ripe tomatoes!

Ingredients:
1 kg. (35 oz) ripe tomatoes, peeled, seeds free (see notes below)
3 garlic cloves, cleaned, roughly chopped
A handful of fresh basil
5-6 table spoons olive oil
Salt and pepper
1 table spoon cayenne pepper
1 table spoon sugar (optional)

Important part of making a homemade tomato sauce is to have all tomatoes peeled and all seeds and extra water removed. This is an easy job, I promise.
Put a large saucepan with water on the stove on high heat. Let water boil.
Once water is boiling put all tomatoes in it for about 30-50 seconds. Remove from water and place on a large wooden board. Once blanched in the boiling water tomatoes will peel so easy. Peel them all, then chop up roughly, as in the process just remove seeds. Only the “meat” should be used in your tomato sauce, so discard all water, seeds and skin.
Throw the boiling water away and put a couple of table spoons olive oil in the same saucepan. Heat on high heat, then throw in the tomatoes, garlic and basil. Turn heat to medium high and cook for about 30 to 40 minutes as you stir once in a while to make sure your sauce will not burn. Stir more often at the end when almost all water is gone and tomatoes might burn easier.
Season with salt and pepper and cayenne. Add a table spoon of sugar in case your tomatoes are sour. If you are using sweet to taste tomatoes then you might not need the sugar – just go with your instincts and adjust to your taste.
Let the sauce cool off for a bit, then transfer to a large bowl/plastic box or other dish and keep covered in the fridge for up to 5-6 days.
See, it is super easy and I am sure that once you taste this recipe you will never buy a ready-made tomato sauce.

Baking pumpkin is easy but a bit time consuming.

That is why I usually buy larger pumpkin than I need and then freeze the left overs so I don’t have to bake again when I need a few ounces for a recipe.

Ingredients:
1 medium pumpkin
A couple of table spoons water

So, I usually bake the pumpkin with the skin and peel it after it is baked. This way you will save a lot of pumpkin because the skin comes of very finely and easy after the pumpkin is baked.

Wash and clean your pumpkin, then cut it into equal pieces and place it on your baking sheet face down, in order to prevent the flesh from burning. Pour a little bit of water on the bottom of the baking sheet and cover with foil.

Bake from 1 hour to 2 hours at 180C (350F), depending on the size of your pumpkin. I usually turn the pumpkin with the face up right at the end and cook it like this (no foil) for another 20 minutes.

After the pumpkin is cooked, let it cool completely, spoon the flesh and puree it.

Store in the fridge for up to a week or freeze it.

Hazelnut syrup could be used in many recipes – desserts, cremes, mousses, drinks and even sauces for savory recipes.

If you can’t find hazelnut syrup in your store, you could easily prepare one yourself at home – it is easy and you don’t need anything but water, sugar and hazelnuts.

Ingredients:
500 grams (18 oz) white sugar
500 ml. water
250 grams (9 oz) raw hazelnuts

Line a baking sheet with parchment paper.
Place the hazelnuts in the baking sheet and bake in a preheated oven to 180 C (350F) for 15 minutes. Once they start to brown, remove from the oven and peel. Chop the nuts roughly and set aside.
In a large saucepan heat the water and sugar. Stir on medium high until the sugar dissolves.
Once the sugar dissolves turn down the temperature to medium-low and add the hazelnuts.
Cook for about 45 minutes as you stir occasionally – by that time the syrup will be a bit thicker, but it will thickens additionally once it cools off. Basically the more you cook the syrup the stronger hazelnut flavor you will get and the thicker it will becomes.
Strain the syrup into a jar and let it cool completely before you close the jar.
This syrup could be kept in a dark, dry place for about a month.
Syrup could be used in many sweet recipes or for flavoring drinks.

Octopus is on my list of “recipes to do” for a very long time. Octopus is known as a very delicate food, which requires special attention and concentration! That is why I wanted to have enough time and fully dedicate myself, when preparing an octopus.
Last Saturday was THE octopus time! Before I begun my plans for the recipe, I spent some time on the web, researching different preparation options, and from a dozen different recipes, I wrote down 2 options, which seemed reasonable.
Option 1: First of the options is based on the fact that octopus, squid, calamari – they are all in the same family – cephalopod. This means that the cooking time should be not more than a couple of minutes, as the more you cook squid, the tougher it gets. I have cooked squid many times, and this theory is perfectly true for it – I usually cook it in heated pan for 2-3 minutes and it is ready to be served. This particular recipes explains that 3 separate pots with water should be brought to boil. The octopus should be dipped in the boiling water of the first pan for 15 seconds, then transferred to the second pan for 15 seconds and then to the third pan. Then it should be ready for serving, unless you would like to season it with roasted garlic and olive oil. However, it turns out that this is not enough time for the octopus to be cooked, in fact it was quite raw, yet.
Option 2: The second option explained that the octopus gets really tender if poached in olive oil, on low temperature for longer time – may be an hour or two. This option I did not manage to try, but is in my list of things to do, next time I buy octopus.
Option 3: A friend of mine shared a third option, which I wanted to give a try – boiling the octopus in water for 40 minutes. That’s it! So simple. To be honest I was a little skeptical about this recipe, but it turns out – it’s working. Exactly on the 40th minute, the octopus was just perfect – tender and delicious. Of course I could not help but add something from me, but you will read it later in the post.
Basically, I divided my octopus in two – placed the first part in boiling water for 40 minutes, and for the rest of the octopus I used Option 1…but it did not work, so I let it boil in a separate pot for 40 minutes as well.
In the first pot with octopus I added garlic and celery. In the second pot I added white wine to the water. There was a slight difference in the taste of both baches of octopus, but after roasted in a pan with garlic and herbs, you will barely notice the difference.
Make sure to add just a little water to boil (300-400 ml.). When you add the octopus, it will release it’s juices, and it will be tastier if it is boiled mostly in natural juices, than plain water.
Basically it turns out that cooking an octopus is not a rocket science, but an easy 40 minutes boiling. After the boiling, you are free to roast it with herbs and olive oil for a few minutes, or pour over with sauce.

As I explained earlier, I divided my octopus in two.
The first part I placed in a pot with 300 ml. boiling water, garlic and celery. Boil for 40 minutes.
The second part of the octopus I boiled in 200 ml. of boiling water + one glass of wine, celery and garlic. Boil the octopus for 40 minutes.

Heat the olive oil in a deep pan. Add the garlic, chives and chili. Cook until slightly crisp. Add the octopus and cook on both sides for 3-4 minutes. Season with salt and pepper. Serve warm!

For garnish I prepared a puree of chickpea, potatoes and chives.
3 large potatoes (boiled)
1 can of chickpea
2 table spoons chives (cut into small pieces)
Red pepper powder
Salt and pepper
1 tea spoon garlic powder
1 table spoon butter

Mash all the ingredients with a fork or in a blender. Add all the spices and the butter. I prefer to serve the garnish warm, so you could warm up the puree, and add the butter just before serving. Mix well so the butter melts.
