If you are looking for a healthy 20 minute dinner recipes, grab this one and don’t hesitate.
This pan seared salmon is not only healthy but absolutely delicious and super quick to prepare!

Ingredients:
200 grams salmon fillet, cleaned
Salt & Pepper
Olive oil
For the marinade:
2 teaspoons mustard
1 small teaspoon balsamic reduction
1 teaspoon hazelnut syrup (substitute for honey or maple syrup, in case you don’t have hazelnut syrup)
1 tablespoon olive oil
1 sprig of thyme
Salt & Pepper
For asparagus:
300 grams asparagus (blanched)
1/2 teaspoon butter
1/2 teaspoon olive oil
Salt & pepper

In a small bowl mix all ingredients for the marinade – add 1 whole sprig of thyme, don’t chop it. Pour the marinade over the salmon fillet and let it sit for about 20 minutes.

In the meantime cook asparagus in a preheated skillet, in the melted butter with olive oil, for about 2 minutes until slightly golden brown on edges (don’t overcook). Season with salt and pepper and keep warm.

Remove salmon fillet from the marinade, discard the thyme. Heat 2-3 table spoons of olive oil in the same skillet. Add the salmon fillet (don’t pour the remaining marinade in the skillet, only the salmon) with the skin side down. Cook on each side for a few minutes. Salmon is very tender so please don’t turn it around in the pan too much.

NOTE: you can cook salmon differently, depending on how you like it cooked – medium, rare or well done.

If you prefer your salmon well done, then you have to cook it a bit longer on medium heat. This way it will slowly cook on the inside and gently brown on the outside.

If you prefer it medium or rare, you can turn up the heat a bit and you will get a crispy outside quickly and the inside will be a bit rawish.

So, keep in mind that high heat will result in quickly browned fish, but on the inside it will be still raw.

Salmon is one of my favorite types of fish… but I can only eat it raw. The cooked version of salmon is too fishy, oily and heavy for my taste. That is why I prefer to prepare light small appetizers with raw salmon, where I could totally follow my instincts and imagination and add whatever ingredients I think of. These types of appetizers are very easy to prepare, they do not take too much time and the result is always great. If you have some vegetables or bread on hand you are good to go!
The other day I was literally dreaming of salmon. I wanted to have a quick bite to eat and came up with this super easy recipe. I had some freshly baked bread, sun dried tomatoes, fresh green onions and some sour cream or mayonnaise and of course the magic ingredient – salmon!
That’s a great idea for a light, quick dinner on a working day!

Ingredients:
1 baguette (cut into slices)
100 grams (3.5 oz) raw salmon (or smoked) (cut into rectangular pieces about half of the size of the bread slices)
50 grams (1.8 oz) sun dried tomatoes (cut lengthwise into small pieces)
2 table spoons sour cream
Salt and pepper
1/2 tea spoon basil
1 tea spoon mayonnaise
1 table spoon soy sprouts (cut into small pieces)
Green onions (cut into small pieces)

In a small bowl mix the sour cream with the mayonnaise and all of the spices.
Take a piece of the bread. Spread the sour cream on top. Place 2-3 pieces of the tomatoes on top of the sour cream.

Place a piece of the salmon on top of the tomatoes. Sprinkle with green onions and soy sprouts.

Repeat the same for all of your salmon bites.

Today I want to share a great appetizer recipe with salmon, cream cheese and zucchini. This is one of the easiest recipes, and still looks kind of sophisticated…so if you have people over, they will be impressed And from my experience, every housewife likes it when friends and family appreciate and congratulate her for the great job she did in the kitchen…. at least I am like that lol

Ingredients:
50 grams salmon (fresh or smoked) – cut into thin pieces
100 grams cream cheese
1 tea spoon lemon juice
1 zucchini (cut lengthwise, app. 5 sm thick)
Salt and pepper
1/2 tea spoon dry basil
1/2 oregano
2 table spoons olive oil

Heat a pan on the highest temperature of your stove. Heat up the olive oil. Add the zucchini and cook until lightly brown on both sides.
Set aside to cool off completely.
In the meantime mix the the herbs, lemon juice and the cream cheese.
Take one piece of zucchini and spread it with a tea spoon of the cream cheese mixture.
Roll the zucchini. Roll a salmon piece around the zucchini roll and place on a serving plate.
