This recipe is one of those quick and delicious ones, that will save you a lot of time when having friends over. Make the popovers ahead of time, prepare the mixture for the filling in advance as well and assemble the meal just before you need it – takes not more than 5 minutes.

For the salmon filling:
50-100 grams smoked salmon, cut into small pieces
3 table spoons scallions (both green and white parts) or chives, cut into small pieces
2 tea spoons capers (finely chopped)
Juice and zest from half lemon/lime
3-5 radishes, thinly sliced
100 grams cream cheese
200 grams sour cream
Salt and pepper to taste
A splash of olive oil
Mix all ingredients in a medium bowl. Season with salt and pepper.
Fill the popovers with the salmon mixture and serve immediately.
