Strawberry mousse

Strawberry mousse with mascarpone cheese

During the summer all I want to eat are fruits, mousses, ice cream, and all food that is colorful and looks fresh!  Of course we all the time calculate calories and sugars, instead of enjoying life and all of its flavors.

That is why today I will show you a simple recipe for strawberry mousse, which is super delicious and low-carbohydrate.

Ingredients:

500 grams (17 ounces) mascarpone cheese

400 grams (9 ounces) fresh strawberries

200 ml. heavy whipping cream

Zest of one orange

Juice of half orange

1 tea spoon vanilla extract

5 grams stevia or 4 tea spoons sugar

200 grams (8 ounces) whole wheat graham cracker crumbs

100 grams (4 ounces) melted butter

First of all mix the graham cracker crumbs and the butter until well blended. Place the crumbs in every serving cup and press until a crust layer forms.

Mix the heavy whipping cream with half of tea spoon stevia or two tea spoons icing sugar, using a hand mixer or a stationary mixer. Place the whipped cream in the refrigerator until you need it.

Please note that stevia leaves an unusual after taste, so make sure you do NOT overuse it. You could substitute the stevia with xylitol or erythritol. I just had only stevia at the time.

Place the mascarpone cheese, orange zest, juice, vanilla extract, strawberries and half of tea spoon stevia in the food processor (or 2 tea spoons icing sugar). Mix until well combined.

Add the whipping cream to the mascarpone batter and mix with rubber spatula.

Evenly pipe or spoon the mixture into the serving cups and refrigerate for an hour before serving.
