No-bake biscuit cake with mascarpone cheese, nutella and Baileys

Today I want to share with you an awesome recipe for no bake biscuit cake with Nutella, Baileys and mascarpone cheese. One of the greatest things about this recipe is that you don’t need to bake it, and the more it stays in your fridge – the better it gets. This type of biscuit cake is very popular around Bulgaria, well the classic version of it, cause I had to add some ingredients from me – like chocolate and Baileys. I just love chocolate!


So the ingredients you will need are:
1 package of biscuits (whatever kinds you like)
250 grams mascarpone cheese
200 ml. heavy whipping cream
200 ml. milk
100 ml. Baileys
100 grams powder sugar
1 tea spoon pure vanilla extract
Nutella
Chocolate (grated for garnish)
Whip cream for garnish (optional)

First of all whip the heavy cream in a large bowl. Add the mascarpone cheese, vanilla extract and half of the sugar. Mix until all the ingredients are well incorporated. If you really love whipped cream, it is totally fine to add more of it. I just love mascarpone cheese, that is why I chose these proportions.
Choose your serving plate – something like a big glass (20 sm diameter) or a baking dish, or a couple of small individual pudding gasses.
Mix the milk, Baileys and the rest of the sugar.
Dip a coupe of the biscuits in the milk. Leave it for 20-30 seconds to get softer (be careful not to leave the biscuits too long, cause they will crumble).


Place the biscuits in the serving plate, just one layer. Spread a couple spoons of Nutella over them. Add one layer of the mascarpone and cream mixture.


Repeat the steps until your cream cheese mixture and biscuits finish. :) Mine had two layers of each ingredient – and a bit more nutella. :)
Garnish with whip cream or shredded chocolate, fruits or nuts.
Place in the fridge for a couple of hours, preferable overnight and serve cooled.
