Mint grilled shrimp sandwich

Yup! Sandwich with grilled shrimp and zucchini! This is absolutely amazing, especially if you are a huge seafood fan like me!
This sandwich is an amazing option for quick and delicious lunch in the office, as it is delicious cold too! Or you could have for dinner with movie – why not? It could be ready in 20 minutes!!!
Shrimp sandwich (1 of 1) copy
400 grams shrimp, peeled and cleaned
2 table spoons lime juice
2 table spoons fresh mint, chopped
1 zucchini, sliced and grilled (here you can read my recipe for grilled zucchini)
2 table spoons olive oil
1 tea spoon dry basil
Chilli powder (optional)
Salt and pepper
2 table spoons cream cheese
1 tomato, sliced
3-4 freshly baked baguettes

Marinate the shrimp in the lime, mint, 1 table spoon olive oil, basil, chili, salt and pepper.
Leave the shrimp in the marinate for 30 minutes.
Heat the second table spoon olive oil in a large skillet. Grill the shrimp on both sides for about two minutes.
Grill the zucchini (or other vegetables of your choice) by the recipe I shared above.
To assemble the sandwich, cut the baguettes in half, spread the cream cheese, add a couple of pieces of zucchini, tomato and shrimp.

Eat warm, or reserve for lunch on the next day!
