Grilled halloumi cheese with grilled vegetables – zucchini, eggplant or carrots is the perfect summer combination! Add a glass of white wine and you have the best dinner ever!
I can’t help but love simple meals, and not only simple, but delicious and quick!
Ingredients:
200 grams (7 oz) halloumi cheese (cut into thin pieces)
1 medium zucchini (cut into rings)
1 tea spoon oregano
1 tea spoon salt
1 tea spoon pepper
2 table spoons olive oil/butter
Heat up a non-stick grill skillet. Add one table spoon of the olive oil. Grill the zucchini on both sides until lightly crisp. Sprinkle salt, pepper and oregano, while cooking. You could grill any kind of vegetables you prefer!In the same skillet grill the halloumi cheese on both sides – sprinkle with oregano.Do not add salt to the cheese, cause it is usually salty.
I would recommend to taste it before begin to cook, and if it is too salty, you may put it cold water for 30 minutes prior cooking to reduce the salty taste.
