I prepared these for another of our cooking Sundays! Everyone brings something homemade and delicious and we eat and talk and play games, or in this case Monopoly, which I lost early in the game. As I just have gotten up, I didn’t feel like improvising or cooking something complicated, so I mixed this batter for 10 minutes, and baked three batches of these cookies for another 30 minutes.
This recipe is super easy and the result is amazing – if you like crunchy crispy cookies, then you will love these. Crunchy on the outside with a slightly softer center.
Ingredients:
500 grams (18 oz) all purpose flour
1 teaspoon baking powder
150 grams butter, melted
300 grams white sugar
A pinch of salt
2 large eggs
200 grams milk chocolate chips (or other if you prefer)
1 teaspoon pure vanilla extract
In a large bowl sift the flour, baking powder and salt. Add the chocolate chips. Set aside.
In another bowl mix the sugar with the butter, add the eggs and vanilla extract.
Add the wet ingredients to the dry and mix well with a rubber spatula at first, then use your hands, since the batter will become tougher for the spatula.
Preheat your oven to 180 C (350 F).
Line a baking sheet with parchment paper.
Using an ice-cream scoop or a spoon form equal by size small balls and line them on the baking sheet.
Make sure to leave enough space between each cookie, because they will expand a bit from the heat.
Bake 10-12 minutes.
Cook on a wire rack.
