If you love pancakes and chocolate as much as I do, then you will fall in love with these chocolate pancakes. They are like heaven. Personally, I love plain pancakes with nutella and freshly sliced bananas, this is my favorite combination, no fruits or cheese or anything else. My husband on the other hand loves everything that has fruits – fruit ice-cream, chocolate with fruits, fruit puddings – everything fruity. That is why I decided to combine his passion for fruits with my absolute love of chocolate and prepare something we can both have – these chocolate pancakes with strawberry sauce. I ate them just plain, because they are pretty chocolaty and he enjoyed them with this super delicious strawberry sauce. They tasted so good, that we ate them all (shame.. shame)!

For the pancakes (Makes about 12 medium pancakes):
135 grams (4.8 oz) plain flour
30 grams (1 oz) cocoa powder
1/2 tea spoon baking powder
½ tea spoon salt
100 grams (3.5 oz) powder sugar
170 ml. (9.20 oz) milk
2 large eggs, lightly beaten
70 grams (2.5 oz) melted butter (allowed to cool slightly) or olive oil
For the strawberry sauce:
135 grams (4.8 oz) plain flour
30 grams (1 oz) cocoa powder
1/2 tea spoon baking powder
½ tea spoon salt
100 grams (3.5 oz) powder sugar
170 ml. (9.20 oz) milk
2 large eggs, lightly beaten
70 grams (2.5 oz) melted butter (allowed to cool slightly) or olive oil
For the strawberry sauce:
350 grams (12 oz) fresh strawberries
70 grams (2.5 oz) white sugar
2 tea spoons cornstarch
2 table spoons water
To make the pancakes: in a large bowl combine the flour, cocoa powder, baking powder, salt and sugar. Mix well. In another bowl mix the eggs with the milk and butter.
Add the wet ingredients to the flour mixture and mix well with a rubber spatula. Even if you have a few lumps, don’t worry, they will disappear during the cooking. Make sure to not over-mix your batter.
Heat a pancake pan over medium heat. Once the pan is hot, brush it with a little butter. Pour two table spoons of the batter over the hot pan (more or less of the batter, depending on the size of the pancakes that you prefer). Let the pancake cook on one side, then flip it when you see bubbles pop and form holes that stay open on the surface of the pancake.
Repeat the same steps until your pancake batter is up.
Tip: cook your pancakes on medium heat in order to avoid burning one side before the pancake is cooked all the way through.
For the strawberry sauce: Combine all ingredients except corn starch in a small heavy bottomed pot. Start cooking the strawberries on medium heat. Once they soften, add the corn starch and mix well with a whisk. Cook for another minute or so then remove from heat and puree.
