Shrimp skewers with ginger, lime and fresh basil

Dear friends,

The sea feeling from last week’s beach time doesn’t want to let me go….., so I decided to stop fighting it and just enjoy some more delicious seafood.

Today I will show you a super delicious and healthy recipe for marinated shrimp skewers. It’s super easy and at the same time kind of sophisticated, so if you have friends over, they will be definitely impressed, and would began to come over more often :)

Ingredients:

20 jumbo size peeled shrimp

Lime juice from half of lime (+ some extra wedges for garnish)

Half of tea spoon ginger powder

A couple of fresh basil leaves, cut into small pieces

5 table spoons olive oil, sesame oil (whatever you have on hand)

Salt and pepper

Clean and peel the shrimp. You may use raw shrimp or already cooked. Place the shrimp in a large bowl. Add all of the ingredients, except 2-3 table spoons of olive oil, to the shrimp. Mix well and let it sit for 15-30 minutes.

Heat your grill under medium high heat.

Skewer the shrimp pieces onto the skewers and grill for about 2-3 minutes per side. Make sure you do not overcook the shrimp, because it will become tougher than you want it.

Tip: if you would like to spice up you diner, you could always add some chili sauce to the marinate. Yummm…
