Hello everyone!
Sunday has always been my favorite days of the week…. time for myself, time to relax and spend time with the people I love! Well, I wish it is summer time and I could show you some fresh and sweet recipe, but since the weather is getting more and more colder and it has been raining whole day long, I will just show you one of my favorite recipes for soups… it is warm and the perfect dish for cold Sunday night.
The recipe is based on red lentils, it has coconut and creamy taste! Most importantly it is very easy and quick to prepare. So grab some onions and red lentils and check it out! I promise that it will be worth it!!!
Ingredients:
2 tablespoons olive oil
1 onion finely chopped
2 large carrots – chopped
1 potato – chopped
4 cloves garlic
1 teaspoon curry powder
1 cup dry red lentils
4 cups vegetable or chicken stock
250 ml coconut cream
1 tea spoon chili flakes
1/2 tea spoon coriander powder
Salt & pepper
Directions:
In a large saucepan over medium heat, heat the olive oil and add the onion and garlic. Cook about 2-3 minutes.
Add the carrots, potato and lentils. Mix to coat with the olive oil and cook for 5 minutes, mixing occasionally. Add in curry powder, chili flakes, salt, pepper and coriander.
Add in the vegetable stock and coconut cream and reduce heat to medium-low.
Cook until vegetables are tender and the lentils are cooked.
Remove from heat and puree, using blender or food processor.
