Cod fish with saute asparagus and hollandaise sauce

Ingredients:
Servings: 2
400 grams cod fish fillet (cut into manageable pieces)
2 table spoons olive oil
200 grams asparagus (steamed)
2 table spoons olive oil for the asparagus
Salt&Pepper
For the garnish:
Salt & Pepper
4-5 cherry tomatoes
3-4 baby potatoes (boiled)
1 tea spoon olive oil

1 tea spoon chili flakes
Salt and Pepper

Fish:
Heat up the olive oil in a large saucepan. Add the fish and cook both sides until golden brown. Season with salt and pepper.
Serve with hollandaise sauce and a garnish of you choice.

Steamed vegi:
Heat up the olive oil in a large sauce pan.
Add the potatoes and cherry tomatoes. Cook for 3-4 minutes. Add salt, pepper and chili flakes.
Cook for another 3 min until golden brown and the cherry tomatoes are soft. Set aside.
In the same saucepan, heat up another table spoon olive oil. Add the steamed asparagus and cook until lightly brown on both sides.
Serve warm.


Tip: To cook the asparagus – heat up a large saucepan with water. Add the asparagus, just when the water starts boiling. Cook for 3 minutes. And voila, you have perfect asparagus for dinner.


If you don’t have the time to saute them, just add some butter, salt and pepper when still hot, and they are done.

Serve warm!
