Happy Sunday everyone! My favorite day of the week…..for many reasons, and one of them is that I get to make breakfast for my friends and family
Enjoy my way of spoiling my favorite people…and if you want to make your family happier than ever… just prepare this great recipe for pancakes with delicious warm banana sauce and white chocolate!
Ingredients:
For the pancakes:
260 grams (9.20 oz) plain flour
1 teaspoon baking powder
½ teaspoon salt
2 table spoons powder sugar
260 (9.20 oz) milk
2 large eggs, lightly beaten
130 ml. melted butter (allowed to cool slightly) or olive oil
For the sauce:
1 banana
1 egg
200 grams (7 oz) milk
3 table spoons powder sugar
1 tea spoon pure vanilla extract or the seeds from one vanilla bean – this is what i used
1 table spoon flour
For the white chocolate sauce:
100 grams (3.5 oz) white chocolate – melted
Sift the flour, baking powder, salt and caster sugar into a large bowl.
In a separate bowl, lightly whisk together the milk and egg, then whisk in the melted butter (olive oil), vanilla extract.
Pour the milk mixture into the flour mixture and beat with a fork until you have a smooth batter.
Heat a non-stick frying pan over a medium heat and add a knob of butter or a bit of olive oil to heat up (make sure the temperature is not too high because the pancakes will burn easily).
When the butter is melted, add a ladle (table spoons) of batter (or two if your frying pan is big enough to cook two pancakes at the same time).
Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen.
Repeat until all the batter is used up. You can keep the pancakes warm in a low oven, but they taste best fresh out the pan.
For the banana sauce:

Place all ingredients in your food processor (blender) and mix well.
Tip: To take out the seeds of the vanilla bean – using the tip of a blade/knife, make a slit down the center of the bean lengthwise of your flattened pod. Then drag the tip of your blade from one end of the pod to the other gathering up the seeds in your knife blade.
Pour the banana sauce mixture in a small heavy saucepan and cook for 5-10 minutes until the mixture begins to thickens.
Place 2-3 pancakes on a plate, pour some of the warm banana sauce around the pancakes, then sprinkle with white chocolate and caster sugar.
Serve warm with additional fresh fruits if you want!
